The money you receive for the Champions League in FIFA 12 is awarded on a round by round basis.
From memory I'm pretty sure that you get £8,000,000 for winning the Champions League Final and several smaller payments of between £2,000,000 and £3,000,000 each time that your Team progresses through each round.
If you win the Champions League you will be likely to earn over £15,000,000 in Champions League Prize Money over a Season.

I'm getting to the knockout stages in my Career Mode and I was just wondering if the final is always at Amsterdam ArenA or if it is chosen at random?

The Champions League is featured in FIFA 12's Career Mode.
To qualify I Won the English Premier League with Blackburn Rovers in Season 1, which meant that I qualified for the Champions Cup (Champions League) Competition ready to play in Season 2.
There is no Champions Cup (Champions League) Competition in Season One of Career Mode in FIFA 12. You need to Qualify for it with your Team in Season One, ready to play in it during Season Two.
